St. Patrick’s Day is right around the corner which means it’s time to start planning your St. Paddy’s Day bash. Once your green decor is up and you’ve bought your green beer, you get to the next step… food. Appetizers are always a crowd-pleaser, but this specific holiday can be a bit tricky to serve for. If you want something on theme, but also something easy to whip up for a crowd we’ve got the perfect St. Patrick’s Day appetizer to pair with a pint. So follow along for our recipe for these simple pesto crostini appetizers that guests will be over the rainbow for.

A Magically Delicious Appetizer

This simple pesto crostini recipe only calls for 7 ingredients and should only take about 10 minutes to make, AKA a perfect St. Patrick’s Day appetizer in our eyes. The ingredients are as follows:

Ingredients:

  • 1 Baguette

  • 1 Jar Pesto (store-bought)

  • Cherry or Grape tomatoes

  • Mozzarella Cheese Pearls

  • Fresh Basil

  • Olive Oil

  • Salt and Pepper to taste

St. Patrick’s Day Party Appetizer ingredients

Steps: 

  • To start this St. Patrick’s Day appetizer, you’ll need to preheat your oven to 450°. Then line a baking sheet with parchment paper or foil for an easy cleanup later.

  • Cut your entire baguette into slices. About ½ an inch wide per slice. 

  • Place the slices in a single layer onto your baking sheet. Then lightly brush both sides of each piece with olive oil (this will use about 2-3 tablespoons of oil). 

  • Place the baking sheet in the oven on the top rack for about 5-10 minutes, or until the slices are golden brown and crisp on the top. 

  • While the bread is cooking, cut each tomato in halves or quarters depending on your preference. 

  • Add the chopped tomatoes into a bowl along with the mozzarella pearls and toss the Mozzarella and tomatoes with a good drizzle of olive oil until evenly coated. Then add salt and pepper to taste. 

  • When the crostini are done toasting, take them out of the oven and spread a thin layer of pesto onto each slice 

  • Top the pesto crostini with the mozzarella and tomato mixture. 

  • Add fresh basil to each crostini.
